“What the firkin hell is this?” I hear you ask. Well, let me explain…

‘Who the firkin hell is…?’ is a weekly glimpse into the lives of individuals that work (some tirelessly) to bring the Brisbane public the very best in good beer. Some are brewers, some own/work in your favourite bar, some are retailers and some are brewery reps.

Up this week is Phil Guilletmot – Retail Manager at Cellarbrations, Bowen Hills. The store is affectionately known across social media as ‘Bowen Phil’s’. Genius punnery.

Phil is a top bloke and will do almost anything for his customers. Almost anything.

Retail Manager at Cellarbrations, Bowen Hills.

How long have you been doing that for?

Since it opened in March last year.

What were you up to before that?

Stock Manager/Customer Experience Manager for Dan Murphy’s.

What is the best part about your job?

The freedom to range a great selection of beer and to share that with like minded people.

What was your ‘epiphany beer’? The beer that made you ‘turn your back on cack’?

White Rabbit Dark Ale. Being not much of a beer drinker at all the thought of a dark beer really didn’t appeal to me. Much to my surprise I enjoyed it.

Have you ever had a beer that has totally blown you away? If so, what was it?

There are many…Rodenbach Grand Cru, Boon Oude Kriek, 8 Wired Tall Poppy, iStout and Superconductor, Kaiju Betelguese and Behemoth…just to name a few.

What is your preferred style of beer and why?

My instinct still steers me towards IPAs but I’ll more than happily have a red or black IPA. Then anything quality in the way of stouts or sours would be my first choices.

If I gave you $100 in cash right now with the only proviso being that you had to spend it on beer, what would you indulge in?

You’re a good bloke aren’t you? I reckon we’d enjoy a good beer or two together with that. [Count me in Phil!]

I have a large hoard of empty beer bottles and another of beer glassware. Do you have any beer-related vices?

Just drinking. I keep it pretty simple at home with a selection of about five different glasses which covers me pretty well. One vice is that I maybe spend too much time on Beer Thread and taking pictures of beers as I have new ones.

In your opinion, where’s the best place to grab a decent beer in Brisbane?

Like everyone else, I’d be pretty stupid if I didn’t say my own place of work – Cellarbrations Bowen Hills (which is where I get all my beer from)…but honestly for those that live in Brisbane, being able to enjoy a wide variety of beers from a variety of locations is the key. We seem to have some great on and off premise venues to keep pretty much everyone satisfied. It would be great to see it grow into the northern and southern suburbs as well.

What is so good about it there?

Great range, competitive pricing, no real beer wank…just great beer to beer enjoyed – not just looked at – and of course discussed with like minded people. 

Bottles or cans?

Big question….straight up, CANS! But let’s be real. Different styles not only suit different glasses, but also storage vessel’s. Let’s face it, that’s pretty much all it is. Don’t over think it.

What are your hopes for the future of Brisbane’s craft beer industry?

Continued growth and success depends on passion. I hope we are all in for the journey.

This isn’t a job interview but where do you see yourself in five years time?

Honestly no idea. Maybe my own thing?

What would your response be if somebody stopped you in the street and asked you what your favourite beer blog is?

Anyone that is helping the industry grow has my thumbs up.
